Chardonnay

Chardonnay is the most widespread and most prestigious white grape variety in the world, originating in France, more precisely in the Burgundy region, where it gives rise to some of the most refined dry white wines. Its remarkable versatility has allowed it to adapt to a great diversity of climates and winemaking styles, from fresh, mineral wines to full, creamy ones matured in barrique. It is precisely this capacity to reflect both the terroir and the hand of the winemaker that has turned it into a universal variety.

In the Republic of Moldova, Chardonnay is one of the most important international white varieties and occupies significant areas, being grown above all in the central Codru region, where the cooler climate and favourable soils allow balanced wines to be made, with lively acidity and freshness. The variety is also valued for its essential role in the production of traditional-method sparkling wines, a prestigious speciality of the underground cellars of the Codru zone, such as Cricova and Mileștii Mici, where fine sugar accumulation and balanced acidity make it ideal for sparkling wine.

Characteristics of the wine

Chardonnay is notable for an aromatic palette that varies considerably according to terroir and winemaking technology. Wines vinified in stainless steel offer fresh notes of green apple, citrus, pear and white flowers, with a clean texture and discreet minerality. Those matured in oak barrels gain body, creaminess and complex aromas of butter, vanilla, toasted hazelnut, brioche and ripe fruit, acquiring a velvety texture. The colour varies from straw yellow with green reflections to golden yellow, depending on the degree of ripeness and maturation.

Food pairings

Dry, fresh Chardonnay suits grilled fish, seafood, white poultry meat and soft cheeses. The fuller versions, matured in barrique, stand up to richer dishes such as oven-baked chicken with sour cream, pasta with butter-based sauces, mushrooms or oily fish. Chardonnay sparkling wines make an elegant aperitif and an excellent partner for festive occasions.

Worked by the majority of Moldovan wineries, Chardonnay remains a key variety both for still white wines and for the quality sparkling wines that established Moldova's sparkling tradition, confirming its status as a pillar of the country's white wine production.
