Sauvignon Blanc

Sauvignon Blanc is a world-renowned white grape variety, originating in France, in the Bordeaux region and the Loire Valley, where it produces dry, aromatic and highly expressive white wines. Now found on every winegrowing continent, the variety is loved for its characteristic freshness and for its intense aromatic profile, easy to recognise even for less experienced enthusiasts. Its very name alludes to its wild and vigorous character, the variety being known for its penetrating aromas.

In the Republic of Moldova, Sauvignon Blanc is among the most widely planted white varieties, occupying significant areas and a leading place among the country's white grapes. It adapts well to the Moldovan climate, expressing itself particularly beautifully in the cooler zones of the centre of the country, in the Codru region, where the natural acidity and the aromas remain lively and balanced. Limestone soils and the temperature swing between day and night help preserve the variety's freshness and aromatic expressiveness.

Characteristics of the wine

Sauvignon Blanc wines usually have a greenish-yellow colour with bright reflections, and an intense aromatic bouquet with notes of citrus, kiwi, white currant, vine flowers, freshly cut grass and aromatic herbs. On the palate they are marked by lively acidity, freshness and a tempting fruity character that makes them very pleasant and easy to drink. They are generally wines intended for young consumption, valued for their aromatic exuberance and their vivacity, although some examples fermented or matured in wood can develop additional complexity.

Food pairings

Its freshness and acidity make Sauvignon Blanc an excellent partner for fish and seafood, salads, green vegetables, asparagus, white poultry meat and, in particular, goat cheeses — a classic pairing that brings out the aromas of both. It also suits light starters, Asian dishes and spiced food, making it an ideal wine for the warm season and for easy meals.

Vinified by numerous Moldovan wineries, Sauvignon Blanc frequently appears as a fresh, aromatic single-variety wine, but also in white blends alongside Chardonnay or aromatic varieties such as Viorica, contributing significantly to the diversity and the rising quality of Moldova's white wines, increasingly appreciated on international markets.
